Salmon with Garlic and Red Pepper Flakes

Salmon is one of those foods that I struggled with for years. Sooooo fishy. And yes, I realize that shouldn't some as a surprise. However, I tend to enjoy the more mild fish that absorb the flavor of the sauce or preparation.

Luckily I have found a few ways to "tolerate" salmon and others to make it downright delicious. This is one of the delicious options and SO easy. Enjoy!

Ingredients:
2 salmon fillets
1/2 cup white wine
olive oil
1 tsp french dressing
1/4 tsp garlic salt
1/4 tsp red pepper flakes
pepper to taste

Directions:
Preheat over to 425.
Mix wine and french dressing in a bowl. 
Coat the bottom of a baking dish with olive oil. Place salmon filets in dish.

Cover fish with wine and dressing mixture. Top with garlic salt, red pepper flakes and pepper.
Bake for 20-25 minutes.

Grilled Sea Bass with Cucumber Clementine Salsa


Say what you will about Gwyneth Paltrow but that chick has some amazing recipes. I especially enjoyed this one since the ingredients were purchased from the Santa Monica farmers market which is where I used to buy my produce. I also enjoy yoga and am a huge Coldplay fan. So...Gwyneth and I are basically the same person ;)

Ingredients for the Salsa: (Serves 4)
1/2 English Cucumber, diced
4 clementines, peeled and diced
1/2 red chili, finely minced
1/4 small red onion very finely sliced
1 tbsp roughly chopped cilantro (optional as always)
6 mint leaves, finely sliced
Juice of 1 lime
Coarse sea salt

Ingredients for the Fish:
Four 6-ounce fillets of sea bass
2 tbsp extra virgin olive oil
Coarse sea salt

Directions:
Combine the cucumbers, clementines, chili, onion, cilantro, mint, and lime juice in a mixing bowl along with a healthy pinch of salt. Stir to combine.

Heat a grill or grill pan over high heat. Coat the fish with olive oil and sprinkle with salt. Grill until firm to the touch and nicely browned, about 4 minutes on each side depending on thickness

Serve the fish with the salsa and extra lime wedges.
